Our organic extra-virgin olive oil is produced with olives from our land, which we hand-pick and always press within hours from harvest. We don't treat our trees at all, including treatments allowed in organic agriculture, and admire our trees’ ability to protect themselves. We have four different varieties ("cultivar") of olives: Moraiolo, Frantoio, Pendolino, Leccino. Typically found in Tuscany, the sapient blend of these varieties is responsible for that "spicy" and "pungent" taste we all go searching for. Rich in polyphenols, our extra-virgin olive oil is cold-pressed, certified organic and filtered, preserving its organoleptic qualities throughout the year.
